BakePOINT Multipoint core probe


The core probe is the useful tool for cooking products that require constant and precise control at the core of the product. This device automatically stops cooking at the very moment when the desired settings are reached.





The BakePOINT core probe guarantees the control in every single second and certifies the cooking status of the product to guarantee its quality.





BakeRPOINT allows to keep constant the difference between the cooking chamber climate and the temperature in the core of the product. This DeltaT function is mostly used for cooking products like Roast beef, hams and large cuts of meat.



BakeAIR multi-fan system


Our multi-fan system with cyclical inversion of the rotation direction is designed to ensure the perfect distribution of hot air in the cooking chamber and to guarantee the perfect cooking of even the most delicate products.







Double low emissive glass


The attention of our engineers is focused on energy efficiency and increasingly restrictive European standards that demand for low-emissivity glass increases.





The low-emissivity glass is equipped with a coating that effectively counteracts the heat loss, K Glass™ offers significantly higher performances in terms of thermal insulation, as well as good energy saving results thus reducing costs.





The internal glass can be opened and easily cleaned.



High-performance thermal insulation


Every BAKE OFF equipment is designed for professionals who intend to immediately reduce the costs that occur with other equipment, ovens or cooking systems; the savings are tangible up to 70% less energy than a static oven and 40% more faster than a convection oven. Our models are the synthesis of 35 years of experience gained thanks to the creation of a wide range of models, from Rotary ovens to Deck ovens, from gastronomy ovens to leavening chambers; this has allowed our engineers to explore the most varied insulating materials, even approaching materials used in space engineering. All of our insulators are produced and specifically designed for the oven industry; we use non-polluting products, totally free of organic binders, with very limited Formaldehyde emissions, safe, stable and resistant to high temperatures. Under the expected conditions, the product is stable over time and guarantees ideal insulation to reduce consumption and save energy both in leavening, cooking and during washing functions.







BakeCLEAN automatic washing system


The intelligent washing system that guarantees perfect cleaning and complete sanitation of the cooking chamber. Our BakeCLEAN washing system allows you to choose the washing system that best suits your needs; our models have 4 washing modes: delicate, normal, intensive, while for the most intense dirt we have created the super intensive.





The ovens are also equipped with a RINSE Safety System which guarantees the hygiene of the cooking chamber.





BakeCLEAN automatic washes, in collaboration with our Clean & Care® liquid detergent, ensure minimum water consumption and perfect cleaning throughout the cooking surface. The joint action of the product with the steam and then the rinsing water has the maximum effectiveness on the fats and residues that are deposited during cooking.





Furthemore, the washing system is able to operate in complete autonomy, and this allows the washing cycles to be carried out during the night.







USB connection


Using a simple USB key, over 300 recipes can be downloaded from the internet.





The oven provides space for 1000 personal recipe programs, which can be saved and transferred to other appliances of the BAKE OFF line, using a simple USB key.

Premix burner BakeFIRE


An innovative design concept allows the gas ovens of the BAKE OFF series to have a high heating output, like an electric convection oven, and a considerable reduction in consumption.





The new highly efficient and low environmental impact burners guarantee CO2 emissions eight times lower than the limit imposed by Gastec, the most restrictive certifying agency in Europe.





The exclusive BakeFIRE burners, combined with the exchanger completely studied and designed with resistant Aisi 316 materials, make the heat transfer to the cooking chamber and the product to be cooked more efficient, thus reducing gas consumption by up to 20% compared to traditional high-pressure blown-air burners for combi ovens and even managing to guarantee energy savings of 40% compared to traditional ovens with atmospheric burners.





They also do not need to be connected to the venting since the emission of CO2 is particularly low.



Blue LED for chamber cleaning check


The special blue LED light positioned in the door frame allows the identification of the most stubborn dirt residues. For this reason, the use of the blue LED lights installed in our models guarantees greater control of the cleaning and sanitation of the washing processes. Thanks to its high efficiency, it guarantees very low consumption and high performances.







Water collection tray


The BAKE OFF ovens are equipped with a front and rear steam and water collection tray: these accessories minimize the risk of damaging neighboring appliances and floors with residues of water and washing detergent.





Its shape and material ensure that the water and steam flow together safely to the rear where there are their specific drains.







Usable also with GN2/3 and GN1/2 trays


A big advantage of the GOURMET combi steamer is the system for inserting the longitudinal tray, which guarantees the best cooking uniformity and the possibility of using trays of different sizes GN1 / 1 GN2 / 3 or GN1 / 2 on the same shelf; this flexibility guarantees savings in the management of daily activities.





A second advantage of longitudinal insertion is compactness: the small size of the instrument makes loading and unloading much easier. Furthermore, with this system our engineers have designed a door with reduced dimensions which, thanks to the short radius, allows less heat loss and therefore energy savings during everyday work.



Core probe MultiBakePOINT


The MultiBakePOINT probe is an indispensable tool to reach the set core temperature with high precision. Thanks to the BAKE OFF technology, we have given the MultiBakePOINT probe four reading points to recognize animal and vegetable fibers and, most of all, intelligent alarms that will guide you to perfect gourmet cooking.

This allows you to use the special BakeHIN probe for vacuum cooking (optional). Just insert the probe plug into the socket and the oven will automatically set itself in "vacuum probe" mode.

Customized programs mode


With this function you can easily and quickly create your personalized cooking programs. You will have up to 10 cooking phases available, in each one you can manage all the parameters in a different way: time, temperature in the chamber or probe, delta T, dry/steam balance and fans speed, and give your work a name and a picture. For unique but repeatable results at any time, even when you're not there.



Manual mode


The precision of the electronics, the simplicity and clearness of the VISION control panel icons, the freedom to set and change whatever you want, whenever you want. With this cooking mode you can choose and control all the functions of the oven, always. Before and during cooking. And the result will be exactly what you want.



Preset programs mode


Choose the program by scrolling through the images, click and start. You will just have to wait for the preheating phase to finish, bake and let the oven do the rest. The end of cooking signal will warn you that the program has finished and you can then take the bake out of the oven and serve. Ground in refractory cement


Bake stone for cooking food built with inorganic binders of a bauxitic nature resistant and stable at high temperatures. The binders and cements used for the construction of these stones are exclusively from Europe and produced by companies certified according to the current EEC reference standards, therefore free from hexavalent chromium and other toxic and/or polluting substances. These bauxitic-type cements are currently used in the food industry and for the construction of plants, chimneys, tanks and all those elements that must withstand high temperatures. The fillers, aggregates and sealants are mainly of a schistic-carbonate nature coming from rivers and soils through the selection and screening process with subsequent washing and final reselection. These cements and aggregates are currently used for the construction of water tanks and are therefore suitable for coming into contact with drinking water and food for human consumption.



Ground in refractory “pink” stone


Refractory stone is a plate made of refractory materials, such as clay or cordierite, polymorphic rock composed of aluminum, iron and magnesium, terracotta or even mortar. According to the type of basic composition, their color also changes, the "pink" one being the most valuable. Compounds cooked at remarkably high temperatures become ideal for cooking. The refractory stone is able to store a considerable amount of heat, resists very high temperatures without causing chemical reactions with food, absorbs the moisture present in the dough to achieve fragrance and crunchiness, is capable of evenly distributing the stored heat on the entire cooking surface, and helps the oven to keep the temperature constant while speeding the cooking process up.
